Description

This recipe came from my sister-in-law and is one of my favorites. It’s easy to make and feeds a crowd (or just me if I hide the bowl from the others). This salsa is good as a dip or on top of chicken.

Ingredients

  • 2 cans (15 Oz.) Black Beans, Rinsed And Drained
  • 1 package (17 Oz.) Frozen Whole Kernel Corn, Thawed
  • 2 whole Tomatoes, Seeded And Diced
  • 1 whole Avocado, Peeled And Diced
  • 1 whole Onion (small)
  • ¼ cups Chopped Fresh Cilantro Leaves (or Can Use 1/8 Cup)
  • 2 Tablespoons Lime Juice
  • 1 Tablespoon Red Wine Vinegar
  • Salt And Pepper, to taste

Preparation

Mix all ingredients thoroughly in a large bowl.

Cover and chill overnight.

Taste and add salt, pepper, or more lime juice as necessary prior to serving.

Serve with tortilla chips as an appetizer or with grilled chicken as a meal.
