Description

These are so quick and tasty. They are a great snack when friends stop by, and are perfect for a quick weeknight dinner for two!

Ingredients

  • 1 bag (about 9.5 Oz. Bag) Corn Chips
  • 1-½ cup Shredded Marble Cheese
  • 1 can Green Chilies (4.5 Ounce Can)
  • ½ cups Diced Red Pepper
  • ⅓ cups Diced Green Onion
  • 6 slices Cooked Bacon
  • Optional Garnishes: Salsa, Sour Cream, Guacamole, Etc

Preparation

Set the BBQ grill to medium heat, and cover a baking sheet with tin foil.

Spread out the corn chips on the baking sheet, keeping them fairly close together to form a nice base. Cover with the shredded cheese. Add as much as you like! If you love cheese, you may want more than 1 1/2 cups.

Add the green chilies, diced red pepper, and diced green onion. If you like more heat, you can add chopped jalapenos as well. Or you can even add diced red onions for more flavor, if you enjoy raw onions on your nachos.

Chop up the bacon into bite-size pieces, and scatter on top of the nachos.

Place on the BBQ grill for 5 – 10 minutes, until cheese is melted and the corn chips are nice and crispy!

Enjoy with salsa, sour cream, or guacamole.
