Description

Great for a light snack any time of day or night. Puff pastry and cheese—what a combo!

Ingredients

  • 1 whole Sheet Puff Pastry (frozen)
  • 2 Tablespoons Olive Oil (to Brush On Puff Pastry)
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • ¼ teaspoons Basil
  • ¼ teaspoons Parsley
  • 2 whole Ripe Tomatoes, Sliced
  • 1 whole Small White Onion Sliced Finely
  • 2 cups Feta Cheese Crumbles
  • ¼ cups Grated Parmesan For Garnishing After Baking

Preparation

Preheat oven to 400 F.

On a large sheet pan add parchment paper and place thawed puff pastry on it. Brush with olive oil (remember to prick the puff pastry with a fork first). Then we will add the ingredients.

In a small bowl add seasonings and mix with a fork. Set aside. Add slices of tomatoes evenly across pastry then add onions on top of that. With a spoon sprinkle seasonings across tomatoes and onions. Add feta crumbles across the top and place in the oven on the middle rack.

Bake for 12-14 minutes or until golden brown. Remove from oven to a cutting board. Add grated Parmesan cheese across the top then cut into 4″ squares, serve and enjoy!
