Description
Simple yet tasty eggplant recipe
Ingredients
- Cooking Spray
- 1 whole Eggplant Sliced Into ½ Inch Rounds
- 1 Tablespoon Sour Cream
- 1 Tablespoon Mayonnaise (can Substitute Sour Cream Or Greek Yogurt)
- 2 cloves Garlic, Minced
- Salt And Pepper, to taste
- 1-2 Tomatoes, Thinly Sliced
- 2-4 Ounces Sharp Cheddar Cheese Thinly Sliced
Preparation
Preheat oven to 350ºF. Spray an aluminum foil lined baked sheet with cooking spray and place eggplant in single layer. Bake 10-15 minutes, remove from oven and flip over.
In a small bowl combine sour cream, mayo, garlic, salt and pepper.
Place tomato slice on each eggplant slice, top with a dollop of sour cream mix and a piece of cheese.
Bake 15-20 minutes or until cheese is bubbly.
