Description

Great, fun appetizer of water chestnuts wrapped in bacon.

Ingredients

  • 1 pound Bacon
  • 16 ounces, weight (2 8-oz. Cans) Whole Water Chestnuts
  • 20 ounces, weight Pineapple Chunks, With Juice
  • ¼ cups Soy Sauce
  • 3 Tablespoons Brown Sugar

Preparation

Preheat oven to 350 degrees.

In a bowl, mix together entire contents of the can of pineapple chunks, soy sauce and brown sugar.

Cut bacon strips into 3 equal pieces. Wrap each water chestnut in one piece of the cut bacon. Secure with a toothpick. Place into a 9×13 baking dish.

Pour the pineapple mixture over the top. Cover with foil and bake for 1 hour. Serve warm. Refrigerate leftovers.

Oh these are awesome! We tweaked the assembly, instead of whole we used sliced water chestnuts. Then cut them in half. Also we wrapped the bacon around both a water chestnut piece and chunk of pineapple. We made a tray the with the brown soy sauce mix poured over the top and some without. Both kinds were yummy and gobbled up fast! We didn’t cover with foil since we were out and it turned out great!
