Description

This is my go-to appetizer dish to take anywhere and everywhere. I always double the recipe and it’s still the first one to be devoured at the party. These are addictive. You’ve been warned! =)

Ingredients

  • 1 pound Bacon
  • 1 can Chunked Pineapple (large Chunks)
  • ½ cups Brown Sugar

Preparation

Set your oven to 375F.

Cut the pound of bacon in half. Put the brown sugar in a shallow bowl. Take a half a slice of bacon and dredge it through the brown sugar. Put a chunk of pineapple on one end of the bacon slice and roll up. Secure with a toothpick.

I put a cookie cooling rack into a foil-lined jelly roll pan. Lay the bacon pineapple bundles onto the rack.

Bake for at least 25 minutes, or until the bacon looks brown and crispy. Sometimes I pop them under the broiler for the last few minutes just to get them really crisp. But watch out – the sugar will burn!

Try to wait for them to cool slighty – only because the tasty goodness will burn your lips if it’s too hot! Enjoy.

A friend of mind made these last night and they were gone in the blink of an eye. The next time one of us makes these, we will definately double the recipe.

Totally addictive!! I cooked the bacon about a minute in the microwave before I dredged in brown sugar and wrapped the pineapple chunks. It reduced the oven cooking time to about 20 minutes and it crisped up nicely without the broiler.

I took these to a party tonight and it was hilarious! I looked over and saw ALL of the men at the gathering standing around in a circle devouring these. Us gals were able to snag a few too! These were fantastic, this will be one of my “go to” party dishes.
