Description

These tasty little bacon and cheese stuffed mushrooms can be made ahead to save time!

Ingredients

  • 16 ounces, weight Button Mushrooms, Stems Removed
  • 1 Tablespoon Olive Oil
  • 1 clove Garlic, Minced
  • 4 ounces, weight Cream Cheese
  • 1 whole Egg Yolk
  • ½ cups Grated Parmesan Cheese
  • ¼ teaspoons Pepper
  • 3 slices Turkey Bacon, Cooked And Crumbled

Preparation

Remove stems from mushrooms. Finely dice 1/4 cup of the stems. Heat olive oil in a pan over medium heat. Cook garlic for 2 minutes. Add diced mushroom stems and cook for 5 minutes, stirring occasionally.

Combine cream cheese, egg yolk, pepper and Parmesan cheese in a bowl. Add in garlic/mushroom mixture and crumbled bacon. Spoon mixture into each mushroom. Bake at 350F for 20 -22 minutes, or until golden brown.

These were REALLY good! I used Aloutte garlic and herb spread and omitted the seasonings. I didn’t have plain cream cheese on hand, so this was a good substitute. They turned out fantastic! A different option than the standard bread crumb stuffing that are found in these mushrooms. Will definitely make again!
