Description

Sautéed asparagus and onions with fresh mozzarella atop toasted baguette slices. Perfect appetizer.

Ingredients

  • 1 Tablespoon Extra Virgin Olive Oil, Plus More To Drizzle On Baguette Slices
  • ¼ cups Onion, Chopped
  • 5 ounces, weight Asparagus, Woody Ends Trimmed Off And Chopped Into Pieces
  • 1 teaspoon Garlic Garlic Seasoning (or 1 Clove Garlic)
  • 1 pinch Sea Salt And Pepper, To Taste
  • 8 slices Baguette
  • 2 ounces, weight Fresh Mozzarella, Sliced Into Small Pieces
  • 1 Tablespoon Sun Dried Tomato Vinaigrette
  • 1 Tablespoon Basil, For Sprinkling

Preparation

Heat the olive oil over medium heat. Add in the onions and allow to soften slightly. Add in the asparagus and cook until slightly soft, 2-3 minutes. Add in the Garlic Garlic, sea salt and pepper. Cook for about 3 more minutes.

Place the baguette slices on a baking sheet and drizzle with olive oil. Top with the slices of mozzarella and place under the broiler until the bread is lightly toasted and the mozzarella is slightly melted. Top with the asparagus mixture and drizzle with the vinaigrette. Sprinkle with basil. Serve immediately.
