Description

Here’s baked beans just the way the cowboys love ‘em. And for summer BBQ, I love ‘em too. These beans are easy, hearty, and big on flavor. I never serve them without rave reviews.

Ingredients

  • 1 pound Ground Hamburger
  • 1 whole Onion, Diced
  • 1 pound Bacon
  • 2 cans (40 Oz. Can) Pork & Beans
  • 1 can (20 Oz. Can) Red Kidney Beans, Drained And Rinsed
  • 2 cans (15 Oz. Can) Baby Lima Beans Or Other White Bean Of Choice, Drained And Rinsed
  • 1-½ cup Ketchup
  • 1 cup Brown Sugar
  • 1 cup Granulated Sugar
  • 4 Tablespoons Liquid Smoke
  • 2 Tablespoons White Vinegar
  • Tabasco Sauce To Taste (optional, But Not For Me!)

Preparation

Brown hamburger and onion; drain. Cook bacon, drain and then chop. Drain and rinse all beans (except for the pork & beans, they go in sauce and all.) Mix all the ingredients together in a 5-quart oven proof pot with a tight fitting lid (I use a Dutch oven). Cook for two hours in the oven at 300 degrees with the lid. Remove lid and cook three more hours at 250 degrees. If the beans are too thick, you can add water to get the right consistency.

I don’t own a slow cooker… but I’m sure they can be made in one. I would be inclined to cook them on low all day in a crockpot. You could also cook over medium heat for a few hours and then reduce it down to low for three more hours.

Do you think I could cook these in a slow cooker? I wondered if two hours on high and three on low would work?
