Description

Spinach Balls. A perfect, and somewhat healthy take on a great appetizer, or great to include to replace a standard meatball in pasta.

Ingredients

  • 20 ounces, weight Frozen Spinach, Cooked And Drained
  • 3 cups Your Favorite Seasoned Breadcrumbs
  • 1 whole Onion, Finely Diced
  • 4 whole Eggs, Beaten
  • ¾ cups Unsalted Butter, melted
  • 1-½ teaspoon Garlic Salt
  • ¼ teaspoons Cracked Black Pepper
  • ½ cups Grated Parmesan Cheese

Preparation

Add the frozen spinach to a large pot of water, and cook on high heat for nearly 12 minutes. During this time, prepare the remaining ingredients. Once the spinach is cooked, drain and let cool. The goal here is to remove all of the water from the spinach, and trust me, there is about two cups that will get strained. If you think you are done removing the water, wait a couple of minutes, and try it again.

Next, get a large mixing bowl out, take the spinach and pull it apart so it is not just one big clump. Add in the remaining ingredients, and mix very well to combine everything.

Preheat your oven to 325 degrees, and line a baking sheet with parchment paper. Take about 2-3 tablespoons of the spinach mixture and shape them into balls, pretty much like you would do a small to medium-sized meatball. Place as many as you can on the baking sheet, and cook for 16 minutes.

When they are cooked, simply serve on your favorite appetizer tray, and your party is all set. Well, for the most part. These can also be made ahead of time, and placed in the freezer. When you are ready to reheat, simply place them in the oven for nearly 20-25 minutes.

Biting into these spinach balls yields a perfect balance of salt, a bit of pepper flavor, and great texture from the bread crumbs. Enjoy.

I made these a couple of weeks ago and they were wonderful! I used plain breadcrumbs and spiced them with garlic powder and italian seasoning. I made them ahead of time and put them in the freezer. Then when needed, I baked them and served them hot.

We ate them as an appetizer/snack with a simple vegetable dip. Really good!

I would recommend these to anyone. Very light and filling.

These are even better with a dash of green tabasco sauce on them. YUM!!

I have a very, very similar recipe. The ingredients are the same except it calls for Pepperidge Farm herb seasoned bread crumbs specifically and also for freshed minced garlic. The only real difference is that it doesn’t say to pre-cook the spinach. You just thaw the frozen spinach, squeeze out the water, and mix it all together. The spinach cooks in the oven. Try it this way – it’ll save you a step and lots of time.

I used olive oil instead of butter, and the oil made little puddles around the the spinach balls after baking. I think it would have tasted better with the butter, so next time I think I’ll do half butter/half oil and see how that works out. Even witht the oil puddles, they were pretty stinkin’ good.

These were delicious. This recipe makes a lot, so unless you have a big family you might want to cut the recipe in half. Regardless, they’re so good, it’s not like they’ll go to waist. (Tasted just as good reheated!)

This has easily become one of our favorite, quick, turn to recipe. The spinach balls are so easy to whip together and the flavor is fantastic! We toss them in with spaghetti and a light tomato sauce. You never miss the meat and they are extremely filling! The first time I made them I cut the recipe in half, but my husband loved them so much that he asked me to start making the full recipe. Thanks for sharing!!!
