Description

A quick and easy healthy dip made from shelled edamame, with just a hint of spice from sriracha.

Ingredients

  • 16 ounces, weight Frozen (shelled) Edamame
  • ½ cups Cilantro, Chopped
  • ¾ cups Red Onion, Chopped
  • 4 cloves Garlic
  • 3 Tablespoons Olive Oil
  • 3 Tablespoons Toasted Sesame Oil
  • 1 Tablespoon Sriracha
  • 2 whole Lemons, Juiced
  • 1 whole Lemon Zest, Finely Grated
  • 1 teaspoon Salt And Pepper

Preparation

1. Boil a small pot of water. Turn off the flame and add the frozen shelled edamame to the water. Stir the edamame for about 10 seconds and then immediately drain the water (you want to just barely thaw the edamame, not cook it).

2. In a food processor, combine all the ingredients, except the salt and black pepper, and pulse until it starts to become smooth. Leave some small chunks for texture. Taste and season accordingly with salt and black pepper.

3. Transfer the dip to a serving bowl, cover, and refrigerate for at least 1 hour. Serve with chips, crackers, or cucumber and carrots sticks.

I have used this very recipe for years. I found it from Rick Bayless. I use is as a Mexican appetizer ~ ‘Faux Guacamole’ or Faux-camole…ha,ha!! Only difference, I use Lime juice rather than lemon. Either way it is wonderful and great source of protein, fiber and FLAVOR!!!

I found this to be a bit bland, but a good base. My friend had made a spicy restaurant style salsa. We added some of that to this and it was fantastic. I do admit that I eat a lot of spicy foods though so I may be biased to more flavorful things. It does have lots of yummy and healthy ingredients though!

Easy to make and a good alternative to regular hummus (that I make ALL the time). I ate it with sliced up cucumbers and it was delicious.
