Crispy rings without the mess of deep-frying. But don’t be deceived – these are not healthy (which is probably why they are so incredibly yummy).
Preheat your oven to 450F.
Combine 1/4 cup flour, salt, pepper and cayenne in a bowl that is large enough to dip the onions into.
In another similar-sized bowl, combine the buttermilk, egg and remaining 1/4 cup flour. Whisk until a smooth batter is formed.
Have all your ingredients nearby to minimize the mess. You’ll need your seasoned flour, then the batter and finally a bowl containing your crushed chips all at arms length.
Cover a baking sheet with a piece of parchment. Drizzle with 3 Tablespoons of vegetable oil then pop it into the hot oven for 8 minutes, or until the oil just starts to smoke. Carefully remove the baking sheet from the oven and rotate to evenly coat with oil.
Dip an onion ring into the seasoned flour. This will help the batter to adhere, which helps the chips to adhere. They all work together – deliciously.
After the seasoned flour, dip the onion into the buttermilk batter. Let the excess batter dribble off before you coat the wet ring with the crushed chips. You will need to use your hands a bit to make sure the chips adhere. Repeat this process with all the onion rings.
Quickly place your onion rings on the baking sheet then return to the oven. Bake for 8 minutes then flip each ring over before baking for another 8 minutes.

Like Christianne, I used panko instead of potato chips, and the onion rings turned out quite well. But I found that the flour/seasoning mixture did not really adhere very well to the onions. I am not sure if this is because of the onions I used or if that’s just the nature of the recipe. In any event–especially if you decide to use bread crumbs instead of potato chips, since bread crumbs lack the extra salt and flavoring of chips–I would recommend putting the spices into the batter instead of into the flour. The spices just didn’t come through for me when they were mixed in with the flour.
Also, I didn’t bother with preheating the pan, and the onion rings came out fine. I just coated the pan with oil, put the rings on the pan in a layer, then baked them as directed. Very easy.

I made these but with breadcrumbs instead of potato chips. They were delicious! I will definitely make them again.

Love the idea of using the potato chips…I wonder if onion and garlic flavor would be overkill. I also like the idea of doing this in the oven instead of the fryer, which would be even messier. Must get buttermilk!
