Embarrassingly easy, but oh so yummy. Try this simple, quick, but yummy last-minute appetizer.
1. Preheat oven to 350°F.
2. Remove casing from brie. (For easier removal of casing, put brie in the freezer for a few minutes. This will also make it easier to cut the brie up in cubes.)
3. Cut brie into 1/2″ cubes.
4. Place mini shells on a baking sheet.
5. Put one 1/2″ cube of brie in each mini shell.
6. Top each brie-filled mini shell with a little of the preserve (almost 1/2 teaspoon).
7. Bake in 350°F oven for 7 minutes or until brie has melted. Be careful to keep an eye on it so shells don’t burn.
(I used apricot preserves, which is yummy with brie, but you could easily use your favorite jam or preserves OR maybe try apple butter or cranberry sauce.)

So delicious! They were a big hit at my housewarming. I used black cherry jam (because it’s what I had) and it was great!

I love these! I top them with the walnut ice cream topping. Always a big hit!

I acutally used phyllo sheets, cut them into strips, tucked the brie and preserves inside, and then folded them into little triangles. They were great! What is also great is you can bake them right away or freeze them to bake off as needed!

Thank you for sharing. I’ve made these a few times already and they are gone in no time. I usually use raspberry and apricot preserves. They are so good.

I’ve never had brie before, so I was a little nervous that the cheese was going to be too pungent. The preserves really mellowed it out. These were delicious! I did have to bake mine a bit longer though.
