Description

This is a great way to use up old bread that’s gone a little stale. The crustiness will keep the bread from turning soggy from the tomatoes, and will crisp up beautifully over the grill.

Ingredients

  • 2 cups Cherry Tomatoes, Washed And Stemmed
  • 2 cloves Garlic, Finely Minced
  • ⅓ cups Olive Oil
  • 2 Tablespoons Balsamic Vinegar
  • 1 pinch Salt And Pepper, to taste
  • 24 pieces 6-inch Bamboo Skewers Or Twelve 12-inch Skewers

Preparation

Place skewers in a glass of water to soak. This is to prevent them from charring on the grill.

With a bread knife, cut the baguette into chunks, about 3/4” square, or roughly the size of the tomatoes.

In a small pan, heat the olive oil in a small pan over medium heat. Add in the garlic and saute until golden brown and fragrant, about 30 seconds to 1 minute. Turn off the heat and then stir in the basil.

In a large bowl, toss the tomatoes and bread in the oil mixture. Add in 2 tablespoons of the balsamic vinegar.

Drain the skewers and thread the bread and tomatoes, alternating until the skewer is almost full.

Place skewers on the grill on medium-low heat. After 2 to 3 minutes, rotate skewers. After another 5 minutes, or when the bread is nicely toasted, remove from heat.

To cook in the broiler, set broiler to high and allow to heat. Place skewers on an ungreased baking sheet and cook for 2 minutes, remove pan and flip skewers and cook another 2 to 3 minutes until the bread is nicely toasted.

what kind of basil? Dried? Fresh?-how much basil?

for the bread, is it day old or fresh? Is it ok if it is fresh?1 or 2 loaves?

Why is it when I see something like this I want to go “duh!” It is so obviously a great idea!! I love toasted bread/croutons and doing it this way is so easy.
