I used to use the same old queso recipe, until one day I decided to branch out on my own and I created what I think is the best queso I have ever eaten! Perfect for watching a football game or any gathering!
Saute the onions briefly in a scant bit of olive oil until softened. Remove and saute the chorizo until done. Carefully remove the meat, leaving the red fat behind.
Place the onions and chorizo in the vessel you will use for your queso dip. Add in the remaining ingredients, stir till well melted. Add Cholula to taste for the heat factor.
Serve with Fritos Scoops chips.

I made this tonight without the sausage and hot sauce because I have kids and it was DELICIOUS!! For adults I might would add a jalapeno or something but it was great!!! thanks for sharing.

I made this for Super Bowl Sunday, it was pretty good, it was REALLY good when it was fresh, the day later, not so much. Thickened up, but flavors did get deeper. I will def make this again!

I made this (without the chorizo) and it was fantastic! I really loved the flavor with the sauteed onions and would probably add even more.

So-o-o good! I added a whole seeded canned jalepeno pepper to give it extra kick and served to watch the Pro-Bowl game. Making again this weekend for Super-Pro. Guys loved it!

I made this for our New Year’s eve party. It was wonderful. I left out the Cholula, because some were afraid it was going to be too hot with the other chilies, but i will use it next time. I love spicy and felt like it would have been fine with the Cholula. Loved the chorizo addition. Very good all around appetizer.
