This filling dish of veggies and beans is great alongside chicken or pork, but can also be eaten as a meal by itself.
Heat a large non-stick skillet over medium heat. Once skillet is hot, spray with cooking spray. Add onions and cook until tender, about 8-10 minutes. Add bell peppers and cook for an additional 5 minutes.
Add zucchini and beans and cook for about 5 more minutes. Stir in red pepper flakes, taco seasoning and garlic salt. Adjust with more garlic salt and pepper to taste.

Beautiful and tasty, too! We ate this as lettuce leaf wraps for the main dinner dish.
