These are good hot, cold or at room temperature. Enjoy as is or with marinara sauce or sour cream. Use any herb you like.
Shred zucchini and set aside. Heat canola oil in a frying pan over medium high heat.
Beat egg in a bowl and mix in the rest of the ingredients. Add shredded zucchini and mix. If it looks too wet, add a little flour. You want thick like pancake batter.
Using a 1/4 cup measuring cup or ice cream scoop, scoop out the batter and add it into the hot oil. Cook patties for about 5 minutes on each side. Remove them from the oil and drain on paper towels and season with a little salt.
