A healthy and delicious way to enjoy zucchini.
1. In a bowl, combine grated zucchini, grated onion, flour, seasoning, salt and pepper.
2. Mix in hummus.
3. In a non-stick pan, drizzle the olive oil.
4. On medium heat, form the patties (makes four large ones or about 8 smaller ones) and cook on each side, 2-4 minutes depending on desired crispness.
