These veggie and cheese fritters make perfect toddler finger food, and you’ll enjoy them, too.
Stir all ingredients together in a large bowl. Scoop 1/4 cup mounds of mixture onto a greased baking sheet and flatten to shape into patties. Bake at 425ºF for 15 minutes. Flip and bake for another 10 minutes until golden brown.
You can also fry these in a little oil if you prefer, instead of baking.
