Wondering what to do with all of those zucchinis and red-ripe tomatoes from your garden? This is a quick and delicious side.
Preheat oven to 400 degrees F.
Slice onions and heat them over medium heat in a skillet with a dash of olive oil. Add salt and pepper to flavor. Saute until onions are translucent, about 8-10 minutes. Add garlic and saute for a minute longer, then turn off heat.
Evenly, slice zucchini and tomatoes. Spray a small (8×8 inch or similar) oven safe baking dish with nonstick cooking spray.
To assemble: alternate layering zucchini, tomatoes and onion mix into the dish until they are nice and snug.
Bake for 45-60 minutes.
