A new spin on an old classic inspired by Veggie Tales!
Preheat oven to 350°F.
In a large bowl on medium speed, mix together all casserole ingredients. Pour ingredients into a buttered casserole dish.
For the topping, in a small bowl, stir together all ingredients. Crumble the Cap’n Crunch mixture on top of the sweet potatoes.
Bake for 35-40 minutes, until top is golden brown and set.
