Adapted from a Taste of Home recipe.
First, clean and chop all of your veggies.
Melt butter in a large skillet and sauté veggies until tender (3-5 minutes). Stir in the broth, barley, salt & pepper and mix well.
Transfer to greased 9″ square baking dish. Cover and bake at 350 F for 50 minutes. Remove cover and bake 5-10 minutes longer, until the liquid is absorbed and the barley is tender.
