Parsnips have an earthy sweet smell and it inspired me to use vanilla with them.
In a large fry pan, sauté the parsnips in 1 tablespoon of the butter and half the sugar until well browned, about 15 minutes. Add the remaining sugar and a pinch of salt. Mix the vanilla with 2 tablespoons of water; add to the parsnips along with the remaining butter and deglaze the pan. Serve immediately. Makes 4 servings.

its when you desolve the brown stuff in the bottom of the pan with a liquid, which then adds tons of flavor to the dish. thanks
