Sweet and savory potatoes for any night of the week.
Preheat oven to 375ºF.
Prick sweet potato several times. Wrap in foil and bake for 1 hour.
Remove potato from oven and cut in half. Scoop flesh of potato mostly out of each half, leaving about 1/4 inch of potato left in the skins.
In a food processor, blend potato flesh with goat cheese, 1 tablespoon of butter and salt and pepper. Spoon potato mixture back into potato skins.
Use a fork to mash remaining tablespoon of butter with bread crumbs and chopped pecans. Crumble topping onto the potato halves.
Place back in the oven for 10 more minutes or until browned on top.
