This is one of my family’s favorites. The bounty of summer tomatoes in this pie makes a great side dish or a meal in itself!
Slice the tomatoes and let them drain on a slotted rack for 30 minutes.
Then lightly sift flour over both sides of tomatoes.
Mix onion, mayonnaise, cheese, salt and bacon together. Spread 1/3 of the cheese mixture in the bottom of the pre-baked pie shell. Layer ½ of the tomatoes in and cover with 1/3 of mayonnaise mixture. Layer remaining tomatoes on top and then top with the last 1/3 of mayonnaise mixture.
Bake at 375F for 30 minutes.
