A delicious way to use fresh garden tomatoes. Great as a side or even a healthy main dish.
Bring water to boil in a saucepan, then gradually stir in couscous. Remove from heat. Cover and let stand for 5 minutes. Fluff couscous with a fork and set aside to cool.
Mix the remaining ingredients in a large bowl. Add couscous when cool and refrigerate at least 30 minutes before serving.
