No room in the oven? Easily roast delicata squash in your toaster oven.
Preheat toaster oven to 425ºF. Line a cookie sheet or roasting pan with parchment.
Slice squash in half lengthwise and scrape out seeds. Slice into 1/2-inch pieces (or leave unsliced and roast halves whole). Drizzle with olive oil, rub oil onto all exposed flesh and sprinkle with salt and pepper. For full halves place them cut side down on the cookie sheet after oiling and seasoning.
Roast squash at 425ºF for 25–30 minutes. Halfway through the cook time for the slices, flip squash with a fork. Whole uncut sides are ready when a fork easily slides into the back of the squash. Slices will be lightly browned, fork-tender with a crispy skin.
Serve squash warm, cold or added to your favorite salad.
