If you have to eat your veggies, you might as well enjoy them smothered in cream sauce, right?
Preheat your oven to 350F. In a large mixing bowl, stir together the soup, sour cream, pepper, thawed and drained veggies, 1 1/2 cups cheese and 1 1/2 cups fried onions.
Pour the mixure into a 9×13 baking dish and cover. Bake for 40 minutes or until veggies are tender. Stir the veggie mixture and sprinkle with the remaining cheese and onions. Bake uncovered for an additional 5 minutes more, or until the onions are golden brown.
