I make this every time I make Kahlua Pork.
Core and chop the cabbage, apple and onion, chopping it fine or coarse to your taste. Coarse makes a good salad, but fine makes a better sandwich topping.
Heat oil in a large saucepan over medium heat. When oil is hot add the onion and cook until it starts to turn translucent. Add the apple and cabbage and simmer for about 10 minutes, stirring occasionally. Add the sugar (you can reduce the amount if you want a more tart flavor). Add about half of each of the following: salt, vinegar and water. Cover the pan and let it steam for about 1 hour, adding the rest of the vinegar and water as the liquid is absorbed by the cabbage. After an hour taste and add more salt to taste.
Notes:
– Monitor the cabbage as it cooks. If you want it a bit more crunchy, pull it off the heat sooner.
– You can also add nuts, raisins, carrots, and whatnot to make it fancier.
