Dried cranberries add just the right tart to the natural sweetness of sweet potatoes. An easy way to incorporate healthy sweet potatoes into your meal.
Preheat oven to 350F.
Peel and quarter the sweet potatoes lengthwise. Dice into ½ inch cubes. Put sweet potatoes into a greased microwave and oven safe dish. Cover with a moist paper towel, microwave for 5 minutes, stir and microwave for another 5 minutes.
Mix the brown sugar and pumpkin pie spice together. Add sugar and spice mixture along with the cranberries and almonds into the sweet potatoes, stir, salt and pepper to taste. Dot the top with the margarine or butter and bake at 350F for 30 minutes.

Yummy and easy! I love sweet potatoes anytime of year and now I have another great recipe for them.
