Description

A great side dish.

Ingredients

  • 4 whole Sweet Potatoes (Not Yams), Peeled And Cut Into Small Cubes
  • 15-½ ounces, weight White Beans (Canned Or Frozen), Rinsed And Drained
  • 1 cup Pure Maple Syrup
  • ½ cups Light Cream
  • 1 teaspoon Cinnamon
  • 1 teaspoon Pure Vanilla Extract
  • 2 Tablespoons Light Brown Sugar

Preparation

Preheat oven to 375ºF. Prepare a 9 x 12 inch baking dish with cooking spray.

In a large mixing bowl, add cubed sweet potatoes, beans, and maple syrup. Stir well. Add light cream, cinnamon, vanilla extract, and brown sugar; stir. Transfer ingredients into baking dish, spread out, cover with aluminum foil and bake for 30 minutes. Then remove foil and bake 10 additional minutes.

We love these with baked ham or pork. Enjoy!
