These are wonderful and stray away from the usual “sweet potatoes and marshmallows” recipe. They are light, fluffy and savory.
Peel and boil yams in the milk and water until tender. Drain and rice (or mash). Fold in heavy cream, butter, salt, pepper, nutmeg and parmesan cheese. Serve hot.
Note: this can be set aside and reheated later in the microwave.
