An alternative to the classic sweet potato casserole. My dear friend Laura G. shared this recipe with me and it is now my go-to sweet potato dish.
Combine sweet potatoes, butter, milk, and salt. Form into patties. Roll in the flakes to coat. Place on a baking sheet and bake at 325 degrees for 30 minutes or so, until flakes are golden/crispy.
Optional: you can try mixing panko with corn flakes, and I like a dash of cayenne in the mixture.
