Tender sweet potato hash browns with fresh sage.
Melt the butter in a large skillet over medium heat. Add the sweet potatoes and onions and season with 1 teaspoon of salt and 1/2 teaspoon of pepper. Cook for 15 to 20 minutes, stirring occasionally, until the potatoes are tender and lightly caramelized. Remove skillet from the heat, stir in the sage, season with salt and pepper to taste and serve.
