Family holiday favorite.
Preheat oven to 350 F. Wash and halve the sweet potatoes length-wise. Line a baking sheet with foil and spray with non-stick spray. Lay potato halves on the baking sheet, cut side down and poke the tops with a fork. Bake for 1 hour or until potatoes are soft. Remove from oven and cool until you can handle them.
Scoop the insides of the potatoes into a mixing bowl. Add melted butter, cream, eggs, brown sugar, cinnamon, ginger, nutmeg and cloves. Beat with an electric mixer until well blended.
Spoon into a lightly greased 1-1/2 quart casserole dish. Top with miniature marshmallows. Bake 30 minutes or until heated through and marshmallows are golden brown.
