Description

Is it a vegetable or a dessert? My father who hates vegetables asks me to make this each year at Thanksgiving and his sweet tooth is as long as mine!

Ingredients

  • 1 can Sweet Potatoes, Drained And Mashed
  • 2 sticks (1 Cup) Butter, Divided
  • 1-½ cup Sugar
  • 2 whole Eggs
  • ¼ cups PET (Evaporated) Milk
  • 2 teaspoons Vanilla
  • ½ cups Brown Sugar
  • ⅓ cups Flour
  • 1 cup Chopped Pecans
  • 1 cup Coconut

Preparation

Cream together 1/2 cup butter (1 stick), sugar, eggs, milk, and vanilla. Add the mashed sweet potatoes to this mixture. Place mixture in a lightly sprayed 13 x 9 casserole/baking dish.

Prepare the topping by mixing together the remaining stick of butter, brown sugar, flour, pecans, and coconut. Break the mixture apart into chunks and place on top of the potato mixture. Bake at 350 degrees for 35 to 40 minutes.

Question? Is the can of Sweet Potatos a large can? Can you give us an ounce weight on it. This recipe looks great I just want to be sure I have the porportions right. Thanks.
