Sweet potatoes that are rich and creamy with a mild smoky flavor.
Combine cream, milk and chipotle in adobo sauce. Spray an 8×8 baking dish with nonstick spray. Place 1/4 of the potatoes in the dish, add a layer of cheese and 1/4 of the liquid mixture. Continue, making 4 layers. Bake for 1 hour to 1 hour 15 minutes, covering with foil for the first half hour and baking till liquid is absorbed and top is browned.

I don’t know what happened. It seems to be really soupy but super brown on top. Also, you didn’t note what temp to bake so I went with 350. I doubled the recipe in a 13 X 9 pan. Maybe that’s what the trouble is. I’m hoping it will thicken more as it cools. We’ll see in the morning.
