Great fall recipe from a friend’s mama.
Scrub and boil whole sweet potatoes for about 20-25 minutes. Drain water and add ice cubes and 2 cups cold water.
Cool potatoes for 5 minutes or so. Drain and peel potatoes. Slice into chunks (about 3/4″).
Heat olive oil in a large skillet. Add apple, sprinkle with allspice and salt.
Sauté for 3 minutes, stirring frequently, and then cover with a lid to steam for 2 more minutes. Add potatoes.
Stir together maple syrup and 1 T water-pour over apples and potatoes.
Lower heat, cover and cook on low for 2 to 3 minutes. Remove lid, stir briefly and top with pepper.
