An easy holiday side dish!
1. Preheat the oven to 350 F. Peel the sweet potatoes. Then using a mandolin or very sharp knife cut the potatoes into very thin slices.
2. Grate the cheese, mince the garlic, and strip the thyme off the stems.
3. In a bowl mix the heavy cream, salt, garlic, thyme, and nutmeg.
4. Get ready to assemble! In a large oven-proof dish (use whatever size and shape dish you have, just make sure it’s oven-proof and big) layer the sweet potatoes and cheese, leaving a small amount of cheese for the top. There should be 3-4 layers of potatoes and cheese. Pour in the heavy cream mixture. Top with remaining cheese.
6. Bake uncovered at 350 F for an hour. The potatoes should be fork tender and the top should be brown and bubbly when done.
