An old Southern recipe and a summer favorite.
Combine first two ingredients, beating until smooth, and stir in squash and onion. Add salt and pepper, if desired.
Drop mixture by spoonfuls into hot greased pan. Flatten slightly with a spatula. Cook until golden brown and turn once.

I don’t know if it’s because I used low-fat sour cream, but I wasn’t able to “beat until smooth” – the flour-sour cream mixture turned into more of a tough, crumbly dough. But the liquid from the summer squash incorporated the dough throughout. These patties put me in mind of a fritter or dumpling of some kind – more bready than I was anticipating. They’re good!
