Side dish brimming with summer flavors. Something different for when you’re tired of rice!
Prepare bulghur by placing 1 cup of it in a bowl and pouring 2 c. boiling water over it. Let sit for 20 minutes while you prepare the other ingredients.
Peel peaches (if desired) and dice. Chiffonade the basil leaves. Toss together lightly.
Pour balsamic vinegar over the peach mixture. Add salt and freshly ground pepper to taste.
Mix in bulghur when it is ready. Serve cold, at room temperature, or warm!
