Stir Fried Bok Choy is an easy healthy side dish that is prepared in about ten minutes. Even my picky son loves this dish. Adjust the spice to your liking and feel good about feeding your family wholesome natural ingredients.
Toast sesame seeds in a dry skillet over medium heat until light browned, approximately 2–3 minutes. Toss or stir frequently to keep from burning. Remove and place in a small bowl.
Heat canola oil in the same skillet over medium high heat. Add ginger, onion and bok choy. Cook for 2–3 minutes, stirring frequently. Add garlic, red pepper and soy sauce and cook for additional 1 minute. Sprinkle with toasted sesame seeds and serve immediately.
Note: Remove the bottom 2 inches of the thick bulb of bok choy. Chop bok choy and rinse thoroughly in a colander. Shake as much of the water out as possible. Dry excess water with a paper towel.
