A tasty use for yellow squash, hopefully straight out of the garden!
Mix all ingredients in a bowl. Salt and pepper to taste.
Drop by heaping tablespoons into hot oil and cook until browned, usually about 3 minutes. Flip, and cook on the other side until done. Enjoy!

I made these last night and loved them! Even a non-squash eater ate one and liked it. I did have to add extra baking mix with the mixture because it was a tad too runny but, other than that, they were very easy to prepare and cook.
