This is a great recipe for spinach lovers! I serve this alongside stir-fried chicken and coconut rice or with my tofu and baby corn recipe and noodles. I make this with my Thai Peanut Sauce recipe, but any peanut sauce works fine.
In a medium-sized covered sauce pan, place ½ inch of water, bring to a boil and add fresh spinach leaves. Cover, and steam for 2 minutes until wilted. Drain into a colander and press as much liquid as possible out with a large spoon. Arrange on a serving plate and cover with peanut sauce and sprinkle with chopped peanuts and red pepper flakes.
