A delicious, non-traditional spin on an Irish classic!
Preheat oven to 400ºF.
Melt butter in a large pan and add garlic. Saute for 1 minute on medium heat, then whisk in flour until it’s absorbed all the fat. Whisk in milk and continue stirring for a few minutes until mixture thickens. Set aside to cool while you cook potatoes.
Add peeled and quartered potatoes to a large pot of boiling salted water. Cook for approximately 15 minutes or until potatoes are fork tender. Mash with a couple of tablespoons of the thickened sauce.
Whisk egg into the slightly cooled sauce and stir in spinach. Fold spinach mixture into mashed potatoes and season to taste. Spoon into a buttered baking dish (approximately 10″) and top with cheddar cheese. Bake for 20–30 minutes until cheese has melted and is light golden brown.
