This is one of those dishes that you should make in the morning and snack on throughout the day. It’s simple and delicious. I always make a double batch so we have it for the work week, but it always gets eaten within one day …. by (ahem) Adam (my husband).
1. Slice cucumber in half then into super thin slices and place in Tupperware or serving bowl.
2. Pour all the rest of the ingredients over the cucumbers and mix well. Let the cucumbers soak for 20 minutes in the regfrigerator before serving. Serve cold.
