This corn side dish holds a special place at my family Thanksgiving table, but you can enjoy it anytime of year.
Cook bacon until crispy. Let cool and crumble into pieces. Chop onion and saute in a small amount of the bacon grease.
In a medium saucepan, add thawed corn, onion, bacon, Rotel ( I use mild so that everyone can eat it), and Italian dressing mix. Add whipping cream and stir the mixture together. Heat thoroughly and serve.
You can also use fresh corn. Just add a stick of butter to the mix.
