A flavorful, spicy black bean dish that is adjustable based on your tastes. Perfect as a side or as a filling for burritos, tacos, etc.
Chop garlic. If you like garlic, add more. If you don’t, add less.
Destem and deseed the jalapeno. Then chop finely. If you want more spice/heat, keep some of the seeds.
In a saucepan, heat the oil over medium heat. Add the garlic and jalapeno, cook until fragrant. This will take less than a minute. Be careful not to burn the garlic.
Drain half the juices from the can of beans. Then add the beans and the remaining juice to the pot. Stir to combine. Bring to a boil and then reduce heat to medium low. Simmer for 5-10 minutes. If the beans get too thick for your taste, add a little water.
Garnish with sour cream, avocado, grated cheese, chopped red onion or cilantro.
