These appetizing, crispy shredded potatoes have just the right amount of sourness and bold spiciness. It’s an authentic Chinese dish but goes very well with any kind of vegetable or meat dish. Compared to French fries, these stir-fried potatoes are not greasy at all.
1. Use a knife or food processor to cut the potatoes into thin shreds (hash brown thickness).
2. Place the shredded potatoes into a colander and thoroughly rinse with cold water to remove the extra potato starch. Then thoroughly drain the water.
3. Heat oil in a frying pan over medium-high heat. Add ginger and chili pepper. Stir occasionally until fragrant.
4. Add shredded potato. Stir constantly for one minute. Add vinegar and salt. Stir-fry for another minute or until the shredded potatoes are translucent. Remove from heat. Garnish with green onion on top. Serve hot or cold.
