Description

Pearl couscous with wonderful juicy raisins and the rich aroma of garam masala pervading it all. Great for a side dish or under a pile of curry!

Ingredients

  • 1 whole Large Onion
  • 1 Tablespoon Oil
  • ½ teaspoons Salt (or More To Taste)
  • 2 teaspoons Garam Masala
  • 3-½ cups Chicken Broth
  • 2 Tablespoons Butter
  • ½ cups Golden Raisins
  • ½ cups Raisins
  • 1 pound Israeli Or Pearl Couscous
  • ⅛ cups Each Of Red Quinoa, Orzo And Mini Garbanzo Beans (See Note)
  • 2 Tablespoons Chopped Cilantro, For Garnish (optional)

Preparation

Note: Instead of using the couscous plus the orzo, Garbanzo beans, etc you can substitute one 16-ounce package of Trader Joe’s Harvest Grains Blend.

1. Clean, then finely dice the onion.
2. Heat the oil over medium heat in a large skillet with deep sides—or use a pot. Add the onion and saute it for 10 minutes with 1/4 teaspoon of salt until onion is browned and caramelized.
3. Add the garam masala and stir fry for 30 seconds, until fragrant.
4. Add the chicken broth, butter and raisins and bring to a boil.
5. Add the couscous/quinoa/orzo/garbanzo mix. Bring back to a boil, then cover the pan and lower the heat. Simmer for 10 minutes, stir vigorously, and then remove it from the heat and let it sit for an additional 5 minutes with the lid on (this will allow the raisins to plump up a little more).
6. Taste and add up to an additional 3/4 teaspoon of salt, depending on the saltiness of your chicken broth.
7. Serve with a little cilantro sprinkled on top!
